Wow, glad I never even tried that one! I read it and had no idea where it was going. Still don't.
Ritz crackers is to MOCK apple pie as breakfast cereal is to MOCK pecan pie. It's (presumably) a specific breakfast cereal, but none of the recipes I saw would name the cereal. They just said "wheat and barley flake cereal," and I'm not sure which one that is. Total, maybe.
Ritz crackers are the main ingredient to Mock Apple Pie--a widely known recipe from the days when apples were hard to get. The main ingredient to Mock Pecan Pie is some kind of breakfast cereal, so its relationship to the pecan is analogous to Ritz crackers' relationship to the apple.
Mock apple pie is mostly a curiosity today (though a couple of people who've had them told me they are surprisingly tasty), but Mock Pecan could be a pretty nice treat for someone with nut allergies.
